This is great for putting on sandwiches to give them a little pep! It’s also just a great condiment to have around for putting on top of stir-fry dishes or Bibimbap. It comes together in a matter of minutes and can be varied depending on the crunchy vegetables you have in the fridge or see at the market that week.
Some water, vinegar, sugar, salt and mustard seeds gets heated, cooled and mixed together and poured over julienned veggies:
Store in jars in the fridge for a few weeks and enjoy as a side slaw, sandwich topping or extra condiment on whatever needs a little pickle pep!

Sandwich Pickle

A zesty veggie pickle that can be used to top sandwiches or stir-fries.
Ingredients
- 1 cup white vinegar
- 4 tablespoons sugar
- 2 tablespoons kosher salt
- 1 tablespoon mustard seed
- 1 cup cold water
- 4 to 5 cups julienned vegetables such as carrots, cucumbers, kohlrabi, fennel, salad turnips, radishes, green beans, snap peas—anything crunchy!
Instructions
- Combine first 4 ingredients in a small saucepan and bring to a boil to dissolve salt and sugar. Add cold water and cool to room temp. Pour over vegetables and chill. Drain and top sandwiches or wraps or add to a salad. Great as a condiment with Bibimbap!
