I made this mayo with all olive oil, it has a great flavor! But you can experiment and see what you prefer. It’s great with canola or safflower oil too.
You crack the egg into the work bowl, then add in the vinegar, mustard powder and salt. Process until it gets foamy.
Then, with the food processor on, you just pour the oil (you can use olive, canola, vegetable, safflower or any combination of those) into the pour spout with the insert in place. The oil drips down into the egg mixture and emulsifies everything together.
Have you ever seen a more glorious site? The taste is out of this world. I have been using this on my sandwiches obsessively.
