First of all usually every Sunday I cook several dishes. Number one it is the way I relieve stress and it gives the family homemade healthy food to enjoy throughout the week. So yesterday I made meatloaf using a favorite recipe by Ina Garten. Than I prepared a slow cooked chicken dish Filipino style using lots of ginger, garlic, and onions. But the first thing I did was make the dough.
I turned the show on and followed the recipe with Katie. I was able to see the soupiness of the dough turn into stretchy dough, the dough pulling off the sides of the mixer and climbing the paddle. It was exactly as she said it would be and I was thrilled. So I turned it out in the bowl let it rise for 4 hours, poured it in the pan, let it rise again put the spices and oil on top baked for 20 minutes at 450 out came the bread and the little vultures, they were circling me like there was road kill in the house.
So here came the moment of truth. Tasting the beautiful loaf of bread that I had just created. It was spongy inside all full of air crusty on top and it was the best damn bread I have ever had in my life. The kids begged me to send some to school. I made them sandwiches so they will be happy today.
So my dream now would be to make a big fluffy southern style biscuit. I have made hard little hockey pucks for 20 years. I have tried everything and I mean everything and no matter what I do I fail. Bottom line I would love to see more and learn more from Katie.

Kathleen your Focaccia looks perfect! I hope it becomes a Sunday tradition. You’ve got me thinking about fluffy Southern Biscuits……..drizzled with butter and honey, oh my.
