Since crab is in season on the Oregon coast, I wanted to repost this tasty crab and avocado panini recipe. Also try making the Focaccia bread and the Mayonnaise recipes.
Crab and Avocado Focaccia Panini

There are many variations of this sandwich. Using the same technique the sandwich can be made with a variety of fillings.
Ingredients
- One freshly baked loaf of herb Focaccia Bread (about 8"x10")
- 2 cups fresh crab, about a pound
- 2/3 cup Mayonnaise (homemade if possible)
- 1 large ripe avocado, sliced
- 8 oz sliced cheese such as Fontina, Comte, Gruyere or Swiss (something that will melt nicely)
Instructions
- Preheat a griddle, either a panini grill or a cast iron pan to medium heat.
- Slice the Focaccia in have horizontally, mix the fresh crab with the mayonnaise just enough to keep the crab together. Spread the crab mixture on one half of the Focaccia, top with the avocado slices then with the cheese. Place the other half of the Focaccia on top and place on griddle, lower the lid of the griddle if it has one, if cooking the sandwich in a cast iron pan, press the sandwich firmly with a spatula so it gets even heat. Grill until the bread is toasty and the cheese has melted, about 20 minutes, turning once if using a cast iron pan.
- This sandwich can also be baked in the oven wrapped in foil, the crust won't come out quite as toasty but it will still be very delicious! Simply wrap the whole thing in heavy duty foil and place in a 325 oven for about 45 minutes.
Notes
- If you don't have access to great fresh crab, substitute some good quality tuna! If your garden or Farmers Market is heavy on eggplant, grill some of that ahead of time and pair it with mozzarella and fresh basil and a drizzle of balsamic vinegar. It’s also great with roasted chicken, blue cheese and bacon, the possibilities are endless. Whatever you like!

I remember how delicious this combination of flavors were and it quickly became my favorite sandwich of all time. The crunchy crust of the focaccia bread with it’s soft inside blended with the crab, cheese, avocado, and homemade mayo were to die for.
